5 Simple On-the-Go Breakfast Ideas for Busy Career Moms

I did not realize how important eating breakfast was until about a month ago. I mean, all my life I have heard people say that breakfast is the most important meal of the day; and eating breakfast will help get you going in the morning. blah blah blah. It would go in one ear and out the other. "If you want me to have breakfast, then come prep it for me in the morning", I thought. 

Like most busy working moms, I am up early. I have to get myself ready, to then get the girls ready: make sure Amelia brushes her teeth, do their hair, grab Aylah's diaper bag and Amelia's lunchbox (which I usually prep the night before); and on top of all that, you want me to also get breakfast ready for myself. Thats silly. Thank god for Aylah's babysitter that usually  has breakfast ready for the girls and saves me the trouble.

Motherhood definitely did not change my love for sleep. I am still NOT a morning person and I hate having to wake up early. It actually makes me upset. I am usually up exactly an hour before I need to be out the house. Therefore, prepping breakfast for myself was on the bottom of the priority list in the mornings. If I had the time, after dropping my girls off, I sometimes will stop at Dunkin and pick up a sandwich. But if not, then I usually just have my coffee until lunch time and have something to eat then. 

But that is all going to change! About a month ago, I had a phone interview for a position at my  job. I did my usual "no eating breakfast" routine. My interview was scheduled for 11AM, before lunch, which meant I had not ate anything all day except for my usual one cup of coffee, that I make at work. 

I was super nervous for the interview and once we got started, I froze. Yep. I choked. My mind drew a blank. I could not remember anything. My responses were horrible. I usually do well at selling myself and talking about my talents and why I am a good fit for this position. But not this time. 

The first thing that came to mind after replaying the horrific interview in my mind was the fact that I had had nothing to eat. My mind was just not working and the anxiety/pressure that comes with any job interview did not help at all. So for all the career moms like me, that skip breakfast, I put this post together for you. Here are five simple and easy breakfast ideas to jumpstart your day,

Eggs and Fruit

Mix two eggs in a bowl, beat with a fork and add milk. Place the bowl in the microwave for a minute. Stir. Microwave again for another 30 seconds. Stir. Repeat this process one more time. Fluff with the fork. Add washed strawberries (or fruit of your choice) and lightly buttered toast, and voila!

Almond Butter and Banana Toast

Get two pieces of whole grain or gluten free toast. Spread one tablespoon of almond butter on each side. Add banana slice on top. Sprinkle raisins or dried cranberries, if desired. 

Cereal and Fruit

Pour your favorite whole grain cereal into a bowl and add almond milk or regular milk. Top with fruit of choice and sliced almonds.

Yogurt Bowl

Mix one small container of your favorite brand of fat free vanilla yogurt with your fruit of choice. Add walnut pieces, dark chocolate chip and/or granola bar.

You can do what I did and just keep the ingredients at work and prep it there so that you can avoid being late. I purchased everything I needed and just kept it all in the fridge at work. Once I drop off my girls and get to work I quickly prep my breakfast and have my coffee as I start my work day.
